Joe and I were wondering about this yesterday.

To our casual observation, it appears that Chinese people really, really like eggs.

Is there some sort of cultural culinary history or reasoning behind this?

Or do just the Chinese people Joe and I know, really like eggs?

I was figuring it was a readily available, cheap source of protein.

I really like eggs. Hard boiled eggs, the hard boiled eggs inside of oden and Chinese soy sauce eggs. Also scrambled eggs, tamagoyaki, tamago gohan, spam wrapped with tamago, omelets, etc.

Yeah, I had a guest in town and she ordered like 2 orders of Tea Eggs from this restaurant on top of all the other foods that she ate there.

I like eggs, but not the hard boiled yolk. The hard boiled egg white are okay with me.

I think it depends on what kinda chinese people.

I think southern chinese people do.  I don’t think northerners eat as much eggs.  There’s rarely eggs in Shanghainese food.

I like salted/preserved duck eggs and quail eggs.  Chicken eggs are kinda boring to me.

Does all congee have ginger in it?

And I’m getting a little annoyed that all these chinese buns I’ve been eating have surprise eggs in them.

I guess if it wasn’t a surprise I’d be OK.  Now I just suspect egg is lurking in anything Chinese food I buy now.

I like eggs but I don’t really eat them that often.  As kids, we used to eat hard-boiled eggs with Maggi sauce.  I thought that was really good and I couldn’t eat eggs without Maggi sauce for a long time.

my mom used to use that because she thought it was healthier than soy sauce.  then she found out “hydrolyzed vegetable protein” = msg.

It is hot and I am thinking about those juice shops in Hong Kong where you can just walk by on the street and order a huge fresh squeezed juice of all sorts of fruits, at least that’s what I remember from visiting a long time ago.  Don’t know if it’s still like that.  I think that’s even better than Jamba Juice.

I do like eggs.  My favorite is hard boiled eggs with dao-you (I have no idea how to spell this - it’s a taiwanese thick sweet soy sauce.  Or maybe it’s just my family.)

Bought some brown rice to try today.  Rice at regular grocery stores is a rip off and tastes like play dough compared to rice from Asian stores!  Up to $5 for 2 lbs.  I wonder if Marina or Ranch 99 sells big bags of brown rice.
